Prepare Timeless Farro and Lentils:
Place farro and lentils each in separate pots. Add water to cover by at least 1 inch. Add pinch of salt, cover and cook until just tender. About 20 minutes. Drain. Add vinegar, parsley. Salt & pepper to taste.
Combine flour, salt, pepper and paprika in medium bowl.
Peel and thinly slice shallots.
Separate into rings and toss in flour mixture.
Pour about 1 inch of cooking oil into saucepan.
Heat over medium heat.
Fry shallots in two batches until golden.
Remove from pan and drain on paper towel.
Season fillets with salt.
Add small quantity of oil to pan.
Cook over medium heat, about 3 minutes per side.
Plate the farro and lentils mix as a bed.
Place salmon fillets on top of bed of farro and lentils.
Top with fried shallots.
