Semi-Pearled Purple Prairie Barley® is lightly pearled; just enough bran has been removed to speed up cooking while delivering the fiber, vitamins and minerals, and anthocyanins needed for a healthy diet. Much of the dark bran remains and the kernel keeps its dark color.
This delicious and beautiful barley is 15% protein, high in cholesterol-fighting beta glucans, and a tasty source of Potassium, Iron, and Calcium. With its dark purple seed coat, it is also high in the disease-fighting anti-oxidants known as anthocyanins. In fact, in testing for ORAC (Oxygen Radical Absorption Capacity), our Purple Prairie Barley tested over 26% – higher than cultivated blueberries!
Use our Semi-Pearled Purple Prairie Barley® in soups, stews, and salads, or alone as an alternative to rice. It is a “meaty grain” with a chewy texture and cooks to a glossy purplish mahogany color. It cooks in just 30 minutes, and you can even use a rice cooker!
