Instructions
  1. Prepare Timeless Farro and Lentils: Place farro and lentils each in separate pots. Add water to cover by at least 1 inch. Add pinch of salt, cover and cook until just tender. About 20 minutes. Drain. Add vinegar, parsley. Salt & pepper to taste.
  2. Prepare shallots: Combine flour, salt, pepper and paprika in medium bowl. Peel and thinly slice shallots. Separate into rings and toss in flour mixture. Pour about 1 inch of cooking oil into saucepan. Heat over medium heat. Fry shallots in two batches until golden. Remove from pan and drain on paper towel.
  3. Prepare salmon: Season fillets with salt. Add small quantity of oil to pan. Cook over medium heat, about 3 minutes per side.
  4. Plate the farro and lentils mix as a bed. Place salmon fillets on top of bed of farro and lentils. Top with fried shallots.
  5. Enjoy!
