Instructions
  1. In a medium sauce pan, add the grain to 4 cups of water and bring to a boil over high heat. Cover and simmer until grain is almost tender, about 20 minutes. Add 3/4 teaspoon salt and simmer until grain is tender, about 10 minutes longer. Drain well. Transfer to a large bowl and let cool.
  2. In a medium sauce pan, add 1/4 teaspoon salt to 3 cups of water and bring to a boil over high heat. Add the broccoli and stir. Cook for 2 minutes. Drain and cool in iced water.
  3. Once the grain has cooked, add the broccoli, olives, red pepper, cheese, and chives or scallions. Stir to combine.
  4. In a small bowl, mix together the vinegar, olive oil, mustard, pepper, and the remaining 1/2 teaspoon salt. Stir to combine. Pour the dressing over the salad. Toss to combine, adjust seasoning, and serve.
