Timeless Food introduced our organic Black Beluga® Lentil in 1994. It was originally named by one of our favorite customers for its resemblance to caviar, and indeed has caught the attention of chefs the world over.
This little black beauty is rich is flavor and deeply satisfying, and is the highest protein of any lentil we’ve ever found. This little jewel is a great choice for dramatic side dishes, pilafs, and as a bed for fish.

"This delicate salad is full of punch" is how our friend Annie Somerville describes this terrific recipe in her famed FIELDS OF GREENS Cookbook. Tangy yogurt, fragrant spices along with lemon juice and cilantro balance the cayenne pepper to make this an unusually delightful and nutritious salad. Annie recommends serving with grilled pita bread.
