Organic Heirloom Grain Sampler. Heirloom or heritage grains and legumes are sought out by chefs and socially-conscious consumers alike for their nutritional profile, cultural connections, and importantly for their distinctive rich flavors. Unlike contemporary grains, heirloom grains have not been subjected to genetic manipulation, extensive hybridization or narrow yield-enhancing selection. Heirloom grains are truly timeless treasures that have been a part of native cultures for centuries and our Heirloom Grains are now preserved by a handful of our dedicated farmers.

 

Our Heirloom Sampler includes a distinctive trilogy of heirloom organic grains—two legumes and one cereal grain. We grow each in limited quantity on our certified organic family farms on America’s high plains. With the Heirloom Sampler you not only support farmers dedicated to sustainable agriculture, but also the preserve a genetically-diverse food heritage stretching back millennia. The Heirloom Sampler is a terrific gift for someone who truly appreciates food, relishes unique flavors and takes pride in preserving our agriculturally rich heritage.

 

The sampler includes one each:

 

Black Beluga® Lentil. Black Beluga® Lentils have historical roots in a wild legume from Central Asia. Although this lentil was virtually unknown outside of India before the mid-90’s, once Timeless introduced it to the food industry in America in 1994. Since then, it has gained both popularity and recognition among chefs around the country and around the world. Not only do Black Belugas cook quickly (20 minutes), but also they have more protein than any other lentil. Furthermore, it is dense in with anthocyanin, a natural substance known for anti-aging and anti-tumor properties.

 

Black Kabuli® Chickpeas. These mid-sized Chickpeas are rare finds. Rather than common blonde types, these mid-sized chickpeas have a charcoal black seed coat. While it may be recognized in certain sections of rural India, it was virtually unknown in America before Timeless introduced it a half dozen years ago. The Black Kabuli® has a characteristic earthy chickpea flavor with a more firmly structured taste derived from tannins in its seed coat. It is loaded in protein, dietary fiber and healthful antioxidants. Substitute them for blonde chickpeas in any recipe, or mixed with them to make visually striking entrees, soups, salsas, salads, or hummus.

 

Purple Prairie® Barley. At the dawn of agriculture, when humankind first consciously domesticated wild plants for food production, wild barley was one of man’s first choices. As a cereal grain, it offered drought-tolerant characteristics, relative ease of harvest, ability to be stored in urns, versatile use, and dense nutrition with a healthful combination of complex carbohydrates and protein. Our trademarked Purple Prairie® Barley traces its ancestry back 8,000 to 10,000 years to the Nile River valley where hulless barleys were first cultivated. Its characteristic purple pigmentation dates back untold centuries to Tibet, where it has been a cornerstone of a simple and hardy diet. Over the past 2 decades, this heritage grain has been made viable by our handful of organic family farmers. To produce the best barley, our farmers sacrifice high yields for optimizing its distinctive taste and healthful nutrient development,
