Du Puy Lentils are stunning blue-green mottled seeds reminiscent of round stones polished smooth by mountain streams. Given their smooth texture, spicy flavor notes, and ability to hold shape when cooked, it’s no wonder that this variety has been the lentil-of-choice for gourmet European and American chefs. Traditionally grown in le Puy region of south central France, these lentils are exceptionally well suited to Montana, where its cool, dry environment accentuate the beauty and flavor of Du Puy lentils. Our Du Puy cook in 20-25 minutes and are recommended for exquisite soups, or in cold or warm salads. Make enough for leftovers, because Du Puy hold up well for days. |

Tangy yogurt, fragrant spices along with lemon juice and cilantro balance the cayenne pepper to make this an unusually delightful and nutritious salad. Annie recommends serving with grilled pita bread.
