Black Kabuli® Chickpeas. Our heirloom Black Kabuli® Chickpeas are true Timeless treasures. The word ‘kabuli’ derives from Hindi, which uses the term to describe chickpeas, but especially those originally raised near Kabul in Afghanistan. With their unusual charcoal black color, our Black Kabuli® Chickpeas can be used in any chickpea recipe. The Kabuli’s® dark coat indicates a high content of anthocyanins, powerful anti-oxidants. They are also higher in fiber with a lower glycemic index than common chickpeas, making them especially well-suited for diabetics. When cooked and mixed with regular chickpeas or used alone, our Black Kabulis make a bold statement in salads, soups, and stews. The Black Kabulis do “bleed” a bit when being cooked, so we recommend cooking them separately from conventional chickpeas. In America, this special legume is grown by only a select few of our organic farmers who are dedicated to a tradition of keeping heritage grains viable and available.
